Pete Wells recently downgraded Thomas Keller's Per Se to two stars in a New York Times Review

Esquire published a piece with some thoughtful responses from variety of chefs around the country including Naomi Pomeroy

Thomas Keller responded with a letter to his customers on his website

I thought the whole thing was interesting. I'd love to eat at French Laundry or Per Se, but honestly, I'd never pony up that much money for a meal when I can have a great night out in Portland for less than a hundred bucks a head including pretty good wine, a cocktail or two and a generous tip.

The thing is, Per Se is so exclusive, that who really can validate his reviews.    There's a good chance they've gone complacent, they are an "old" restaurant at this point comparably, but Wells piece seemed like a hit piece on that entire style of dining, as opposed to just Per Se.     Interesting to read the other's views on it, especially Pomeroy who had a good bit there.
