Molecular Gastronomy Ingredients?

Does anybody know a local shop selling chemicals used in molecular gastronomy?  Specifically I'm looking for sodium citrate, xanthan gum and lecithin.

 

Yes, I know you can order this online, I'd just prefer a local vendor.

If we were in NYC I could give you a list of a few local suppliers, but there's not much in PDX. I would say your best bet is the Bob's Red Mill store; they tend to carry a lot of specialized ingredients. They also offer a wholesale discount for commercial businesses if that applies to you. bob's does indeed have xantham and lecithin.

WCI used to have a stash of this stuff. I'd check with them for the sodium citrate. I also have purchsed from Will Goldfarb, former New York mmodernist pastry maven, now "slaving" away in Bali. His Willpowder line is pretty good....make your Frankinmeats with some transglutaminase and, my very favorite, convert any fat into a powder with tapioca maltodextrin.

maltodextrin can be found at any home brew shop such as steinbart's
