I soaked a package of Rancho Gordo beans overnight. That was 2 nights ago and I just remembered 2 minutes ago. Are they okay to cook or did I make bacteria stew & they need to be tossed?

Did you soak them inside or outside the refrigerator? Inside should be totally fine. Outside I would toss them.

In the future, just soak your beans in the fridge and it won't be an issue.
