Hi,

I need to source raw/uncooked croissants - frozen preferred. They need to be real laminated croissant dough - not the Pillsbury bready stuff. I'm looking for 8-12 dozen at a time (depending on size), about once a month. Cash & Carry only seems to have pre-cooked frozen croissants.

A possible alternative would be frozen uncooked Danish or other frozen uncooked laminated-dough product.

Thanks!

Have you contacted Baker and Spice or Grand Central Baking?

I would call Carrie at Florio Bakery, as she does take and bake croissants (and other goodies!) for both retail and wholesale.
Good things come out of her laminates:
