There is a competition at work next week for bacon based food entries. I am looking for something that serves a large number and will stand out and is not too hard to execute.
Hi, it may be too late, but here's something I do: saute a big bed of chopped leeks (in butter), add cream and thyme, let reduce.
Saute a large quantity of shrimp (I sear a few scallops) to put over leeks. Sprinkle with rough-chopped bacon (Carlton Farms or Nueskes)
and drizzle with a balsamic glaze.
Tasty and bacon-y!
