Last night I had a very ripe pear that I did not want to waste so I used my stick blender to liquify it and added some water, fresh rosemary, and a dash of vanilla. I put it in a glass dish with a plastic snap cover and froze it. I then used a fork to create the fruit snow. It wasn't bad but it wasn't great.
I know less vanilla would have been better (and I put in less than a tsp.) and more rosemary would have been more interesting (this was being served with grilled lamb that had been marinated in a sort of agrodolce marinade with lots of rosemary and a few other things).
Anyway, if anyone has experience with good granita recipes, I'd be interested in them.

You will need 140g caster sugar and 250ml water in a saucepan over medium heat. The procedure is simple as mixing this 2 ingredients in saucepan and stir it until the sugar dissolves. Bring to the boil. Reduce heat to medium. Cook for 3 minutes or until the syrup thickens.
