So, as the dust settles from "the bagel wars", does anyone make a "white" rye bagel?
Just happened upon this old thread while trying to find rye bagels in Portland. Did you ever find any? I brought back a dozen "true rye" bagels from Once Upon A Bagel in Chicago and they are gone now and I am very sad. By "true rye" I mean not pumpernickel, not made with wheat flour, has caraway seeds in the bagel not on top, and has a crust of corn meal on the bottom. Damn those bagels were good.
